Easy Make-Ahead Lasagna

1. (cheese filling) mix 3 cups cottage cheese, 2 eggs, 1/4 tsp. nutmeg, 1 cup shredded mozzarella, and 1 tsp. sugar in bowl

2. (tomato filling) in separate bowl mix 36 ounces prepared spaghetti sauce, 24 ounces water, and 1/2 pound meat of your choice (optional....can use ground beef, chicken, sausage, pepperoni, TVP, etc.)

3. use 16 UNCOOKED lasagna noodles for this recipe

4. you will need an extra cup of shredded mozzarella for the top

Layer ingredients in 9 x 13 dish as follows.....1/3 of your tomato filling, 4 noodles, 1/2 cheese filling, 4 noodles, second 1/3 of your tomato filling, 4 noodles, last 1/2 of cheese filling, 4 noodles, last 1/3 of tomato filling, 1 cup mozzarella cheese

Cover and refrigerate overnight. Preheat oven to 350. Bake with foil on top for 1 hour, uncover and continue baking until sauce is bubbly and cheese is golden brown (about another 20 minutes or so.) Let sit 15 minutes before cutting


Peanut Butter Kisses

SUPER easy, delicious cookies. Great for kids to make on their own!
Ingredients:
1 cup sugar
1 cup peanut butter
1 egg
20 hershey's kisses

Heat oven to 350 degrees. Mix sugar, peanut butter, and egg. Drop by rounded teaspoons 1 inch apart on cookie sheet. Press kiss into center. Bake 10 minutes or until golden. Allow to cool.


Brownie Trifle

Ingredients:
8x8 pan chocolate chip brownies
3 cans pre-made chocolate pudding (I use Thank You brand)
2 (8 ounce) containers whipped topping 
fresh raspberries
small amount of grated chocolate

Set out the whipped topping to thaw. Cut the brownies into very small, bite-size pieces. In bottom of trifle dish, place a layer of brownie pieces. Spread 1 1/2 can pudding over brownies, filling in all the cracks. Next layer 1 container of whipped topping. Add raspberries around outer edge for decoration. Next repeat brownie/pudding layer. Last layer is the remaining whipped topping. Decorate top with raspberries and grated chocolate.


Sarah's Chili

This is my mom's recipe.....so comforting on a "chilly" day!

2 pounds ground beef (browned with salt and pepper to taste)
2 cans spicy chili beans
1/8 cup brown sugar
2 cups ketchup
2 teaspoons chilil powder
1 can tomato sauce (8 oz)
1 can tomato paste (6 oz)
2 tablespoons worcestershire sauce
add water until desired consistency (1-2 cups)

Simmer on low heat for 1 hour (or cook on low in crock pot all day).

Snickerdoodles

Snickerdoodle Cookie
You will need.......
2 sticks butter (softened)
1 cup brown sugar
3/4 cup white sugar
1 tsp. lemon juice
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 3/4 cups flour

1/2 cup white sugar
1 tablespoon cinnamon

Preheat oven to 350. Cream butter, brown sugar, and white sugar. Add lemon juice, eggs, vanilla...beat until combined. Add salt, baking soda, baking powder, and flour......mix until well combined. Chill at least 1 hour. Meanwhile combine 1/2 cup white sugar and 1 tablespoon cinnamon in a bowl. Roll dough into 1" balls.....then roll balls in sugar/cinnamon mixture until well coated. Place 2" apart on a cookie sheet lined with parchment paper. Bake 10-12 minutes or until golden brown.


Easy Homemade Donuts

You will need:
1 can refrigerated biscuits (10 biscuits)
vegetable oil
1 cup chocolate chips or 1 cup powdered sugar
(makes 10 donuts, plus 10 donut holes)

Heat 1 1/2" of oil on medium heat in heavy saucepan. (Oil should be 350 degrees, never leave hot oil unattended.) Cut holes in biscuits using a small round cookie cutter (or the cap to a water bottle works nice). Save the "holes". Fry each side until golden brown (less than 1 minute per side....watch carefully!) Set finished donuts on paper-towel lined plate. Fry the donut "holes".

Chocolate donuts: Allow donuts to cool slightly. Melt 1 cup chocolate chips in microwave-safe bowl. Dip donuts in chocolate......add sprinkles if desired.

Powdered sugar donuts: Place 1 cup powdered sugar in large ziplock bag. Place warm donuts in bag and shake until coated. Works great with the donut holes, too. Sometimes we add 1 tablespoon cinamon to the mix.


Taco Soup

It's unusual for all 5 of my kids to love the same meal......but this is a winner!

Combine 1 pound browned ground beef or shredded chicken, 1 small chopped onion, 1 box chicken broth (32 ounces), 1 cup salsa, 1 can black beans, 2 tablespoons taco seasoning, 1 teaspoon cumin, and 1 can tomato sauce (15 ounces) in crock pot. Cook on low for 4 hours or longer.

Immediately before serving add your choice of shredded cheese, sour cream, and/or crushed tortilla chips.

Pumpkin-Spice Muffins

Mix all ingredients on medium speed until well combined. Fill greased muffin cups (or use baking cups) 2/3 full. Bake at 350 degrees for 18-22 minutes, or until tops bounce back when touched.







Ingredients:

15 oz canned pumpkin
12 oz can evaporated milk
2 eggs
1/2 cup applesauce
1 stick butter (melted)
3/4 cup brown sugar
1 cup orange juice
1/2 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground cloves
1/2 tsp. ground allspice
1 tsp. vanilla
1 cup whole wheat flour
2 cups all-purpose flour


Below you can see a slide show of some of the cakes I've made for my family......
I use homemade buttercream icing, then top with homemade marshmallow fondant. I sometimes "paint" words and decorations onto the fondant with food coloring. Other times I make decorations out of fondant and attach to the cake.
